Ingredients
for 4 persons:
800g of baby marrow's (zucchini - courgettes),
mint leaves, vinigar, olive oil, salt and pepper.
Procedure:
Rinse and dry the baby marrow's, fry them in a
small quantity of oil and take care to drain them
well in absorbent paper.
Layer them in a oven dish with alternate layers
of mint leaves, salt and a pinch of pepper.
Add a glass of vinegar to the oil in which you
fried the marrow's and boil the mixture for approximately
ten minutes.
Pour over the marrow's and allow marinating for
at least 12 hours.
