Ingredients: Eight fresh Sardines ( fresh or frozen) Two cloves of garlic A sprig of chopped parsley. Half a glass of white wine. A red and a yellow pepper, roasted and peeled. Olive oil. Salt and pepper to taste.
Procedure: Clean the sardines in running water, pat them dry and set them aside. Bruise
the garlic and place in a pan with the oil and fry gently so as not to
burn the garlic. Slice the peppers and add them to the pan. Add the
sardines and the parsley. Add salt and pepper to taste and a splash of
wine. Allow to cook at a low heat for approximately 20 minutes or until
such time as all the wine has evaporated. Serve hot. Recipe and photo courtesy of Adelaide Molfetta
